David Olivas, born in Úbeda (Jaén), has developed his professional career in Marbella. Perfectionist, demanding, creative, and deeply inspired by his Andalusian roots, he built his career as head chef in Michelin-starred restaurants. In 2016, together with maître d’ and sommelier Fabián Villar, he opened Back — a restaurant that quickly gained the attention of guests, press, and critics alike, earning recognition and prestigious awards from the very beginning. In November 2023, Back was awarded its first Michelin Star.
At his restaurant, Olivas gives free rein to a contemporary interpretation of traditional Andalusian cuisine. A proposal rooted in local Andalusian produce, enriched with influences from around the world.
Fabián Villar
Maître d’ & Sommelier
Born in Ronda, Fabián Villar completed both his training and professional career in the province of Málaga He was awarded Best Sommelier of Andalusia–Málaga–Costa del Sol in 2014 and achieved 5th place in the National Sommelier Competition. He was also an Andalusian finalist in the Nariz de Oro 2014 competition, Best Young Sommelier of Andalusia in 2011, and received the Excellence in Education Award in 2012.
With extensive experience in hospitality and deep knowledge of wine, Villar has created an elegant, warm, and dynamic dining room experience, supported by an international wine cellar with a strong focus on Andalusian labels. This is complemented by a carefully curated cheese trolley and an outstanding spirits trolley. Since opening Back in 2016 alongside his partner and friend David Olivas, the evolution of the restaurant’s front-of-house experience has been remarkable. Undoubtedly, this has been one of the key factors behind the restaurant earning its first Michelin Star in November 2023.
